Ingredients:
- 1 small roasted beet, peeled and chopped
- 1 can chickpeas, drained and rinsed
- Zest + juice of 1 lemon
- ½ tsp salt
- ¼ tsp black pepper
- 1–2 cloves garlic, minced
- 2 Tbsp tahini
- 3 Tbsp extra virgin olive oil
- 2–3 Tbsp water (as needed for consistency)
- 30oz Square U-Konserve
Instructions:
- In a food processor, combine the roasted beet, chickpeas, lemon zest, lemon juice, salt, pepper, garlic, and tahini.
- Blend until smooth, gradually adding olive oil while processing.
- If the hummus is too thick, add 1 tablespoon of water at a time until you reach the desired consistency.
- Taste and adjust seasoning as needed.
- Transfer to a U-Konserve stainless steel container for easy storage.
- Serve with fresh veggies, crackers, or use as a spread.
