Ingredients:

  • 1 small roasted beet, peeled and chopped
  • 1 can chickpeas, drained and rinsed
  • Zest + juice of 1 lemon
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1–2 cloves garlic, minced
  • 2 Tbsp tahini
  • 3 Tbsp extra virgin olive oil
  • 2–3 Tbsp water (as needed for consistency)
  • 30oz Square U-Konserve

Instructions:

  1. In a food processor, combine the roasted beet, chickpeas, lemon zest, lemon juice, salt, pepper, garlic, and tahini.
  2. Blend until smooth, gradually adding olive oil while processing.
  3. If the hummus is too thick, add 1 tablespoon of water at a time until you reach the desired consistency.
  4. Taste and adjust seasoning as needed.
  5. Transfer to a U-Konserve stainless steel container for easy storage.
  6. Serve with fresh veggies, crackers, or use as a spread.

This hummus stays fresh in the fridge for up to a week—making it a great snack staple!
