Korean Soondubu Jjigae Inspired Soup

This comforting soup inspired by Korean Soondubu Jjigae is delicious and warming with the perfect kick🌶️ The triple Insulated Food Jars from U-Konserve are perfect for prepping, traveling, and enjoying your food anywhere!
Ingredients:
- 1 Tbsp scallions, chopped
- 1 clove garlic, minced
- 1/2 tsp sesame oil
- 1.5 tsp neutral tasting oil (canola, grapeseed, etc)
- 1 Tbsp gochujang
- 1.5 Tbsp soy sauce
- 1/4 tsp sugar
- 1/3 cup enoki mushrooms
- 1/4 block extra soft tofu, sliced
- 1/3 cup rice cakes, rinsed w/ cold water
- 1/2 bundle vermicelli noodles
- Insulated Food Jar
Instructions:
- Heat oils in a pan over medium high heat, until the oil starts to shimmer and just barely smoke (2-3 minutes)
- Add scallions and garlic to your large insulated food jar from U-Konserve
- Carefully pour hot oil into the jar and allow the scallions and garlic to sizzle
- Add gochujang, soy sauce and sugar to the jar. Then add tofu, enoki mushrooms, rice cakes, and noodles
- Pour boiling water into the jar until it just covers the ingredients. Cover with the lid and let stand for 5 minutes
- Mix the soup well and enjoy!
Note: You can prepare the jar ahead of time and pour hot water over the ingredients once ready to enjoy :)
