Ingredients: 

U-Konserve BounceBox Rectangle Nesting Duo

Muffin batter:

  • 1/2 cup milk
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1/4 cup melted butter
  • 3/4 cup granulated sugar
  • 1 1/2 cup all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup fruit of choice, chopped

Crumble topping:

  • 1/2 cup all purpose flour
  • 1/4 cup brown sugar
  • 3 Tbsp melted butter

Instructions:

  1. Preheat oven to 425F
  2. In your Rectangular BounceBox, beat egg, milk, vanilla, and butter until well combined
  3. Add flour, sugar, baking powder, and salt and mix until a smooth, thick batter forms.
  4. Fold in chopped fruit until evenly distributed. Bake on the center rack of your oven for 20 minutes
  5. In the meantime, gently mix flour, brown sugar, and butter until just combined (take care not to overmix, you want lumps!)
  6. After 20 minutes, lower the oven temp to 350F. Carefully remove the muffin from the oven and top generously with the crumble
  7. Bake for another 20 minutes or until a toothpick comes out clean from the center
  8. Allow to cool about 20 minutes. Enjoy!
