Pickle Dip
Whether you're lounging poolside, heading to a backyard barbecue, or packing a picnic, this quick and easy pickle dip is the cool, creamy companion you didn’t know you needed. It’s also a great way to finally use up that jar of pickles that’s been hanging out in your fridge for a little too long.
This dip is made with just a few fresh ingredients. Scoop it up with sliced veggies, crackers, or spread it on sandwiches for a tangy twist.
Ingredients:
- 1 cup plain Greek yogurt
- ½ cup finely chopped pickles (any kind you like!)
- 1 small clove garlic, finely minced or grated
- 1 tablespoon fresh dill, chopped (or more to taste)
- 1 teaspoon fresh lemon juice
- Salt and pepper to taste
Instructions:
- In a medium bowl, combine the Greek yogurt, chopped pickles, garlic, dill, and lemon juice.
- Mix well until everything is evenly combined.
- Taste and season with salt and pepper as needed (some pickles are salty enough on their own!).
- Chill in the fridge for at least 15–30 minutes to let the flavors mingle.
- Serve with fresh-cut veggies, crackers, pretzels, or in your favorite reusable U-Konserve container for on-the-go dipping.
