Esquites (Elote)
Serves 4, 10 minutes.
Inspired by the beloved traditional elote, or Mexican grilled street corn, esquites takes all the elements of the classic dish and transforms them into a creamy and savory appetizer. This dip is perfect for summertime grill-outs and get togethers.
Ingredients:
- 1 can of corn or frozen corn
- 1 tablespoon olive oil
- 1/2 cup mayonnaise
- 1/2 cup cotija cheese, crumbled
- 1 tbsp minced garlic
- Juice of 1 lime
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- Tortilla chips, for serving
Instructions:
- Drain your can of corn or add frozen corn into a pan, and toast with the olive oil in a pan over medium heat. Cook until the corn is warm and slightly charred.
- Put your corn into your BounceBox or U-Konserve containers and add mayonnaise, cotija cheese,minced garlic, lime juice, chili powder, smoked paprika, salt, and pepper. Stir well to combine all the ingredients thoroughly.
- Taste and adjust the seasoning according to your preference.
- Serve the elote dip with tortilla chips for dipping.
