Plant-Based Grill Out – Elote Dip

Elote Dip

Serves 4, 10 minutes.

Inspired by the beloved traditional elote, or Mexican grilled street corn, this dip takes all the elements of the classic dish and transforms them into a creamy and savory appetizer. This dip is perfect for summertime grill-outs and get togethers. 

Ingredients:

  • 1 can of corn or frozen corn
  • 1 tablespoon olive oil
  • 1/2 cup mayonnaise
  • 1/2 cup cotija cheese, crumbled
  • 1 tbsp minced garlic
  • Juice of 1 lime
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • Tortilla chips, for serving

Instructions:

  1. Drain your can of corn or add frozen corn into a pan, and toast with the olive oil in a pan over medium heat. Cook until the corn is warm and slightly charred.
  2. Put your corn into your BounceBox or U-Konserve containers and  add mayonnaise, cotija cheese,minced garlic, lime juice, chili powder, smoked paprika, salt, and pepper. Stir well to combine all the ingredients thoroughly.
  3. Taste and adjust the seasoning according to your preference.
  4. Serve the elote dip with tortilla chips for dipping.
  5. Enjoy this creamy and flavorful elote dip as a crowd-pleasing appetizer or side at your plant-based cook out!
