Balanced Sweet Potato & Quinoa Salad

This refreshing and nutritious recipe is a great way to add more whole foods in your diet. Made with nutrient-rich sweet potatoes and quinoa, this salad is packed with fiber, protein, and vitamins to keep you feeling satisfied and energized. It's perfect for a healthy meal to pack for the week or a simple weeknight dinner.
Ingredients
- 1 medium sweet potato
- ½ red onion, sliced
- 2 tablespoons olive oil
- 4 cup spinach
- 1 ripe avocado, sliced
- 1/2 cup cooked quinoa
- 1T toasted sunflower seeds
- 1/4 teaspoon garlic powder
- 1/8 teaspoon salt
Directions
- Cook quinoa according to instructions and set aside.
- Preheat over to 425. Toss sweet potato and onion in the olive oil, garlic powder and 1/8t salt in medium bowl. Spread on large rimmed baking sheet. Roast until vegetables are brown and cooked through (aprox. 25 min)
- Allow vegetables to cool completely.
- Assemble in bowls with spinach, quinoa, roasted vegetables, avocado slices and a sprinkle of sunflower seeds. Enjoy right away or throughout the week (add avocado day of to avoid browning).
