Citrus Strawberry Chia Jam

This recipe gives a citrusy twist to your classic strawberry jam. Strawberries, tangy citrus, and chia seeds come together to make a tasty spread that tastes good and is good for you.
Ditch the sugary, preservative-filled store-bought options and try this homemade alternative. Perfect on toast, yogurt, or pancakes, and makes a great addition to any charcuterie board.
Ingredients
- 1 pound fresh strawberries, sliced
- 3 tbsp honey
- 2 tbsp chia seeds
- ¼ tsp lemon zest
Instructions
- Heat strawberries in a saucepan over medium heat. Add the honey and stir as the strawberries soften.
- Once the berries have softened and are breaking down, use a potato masher break them up..
- Let the mixture come to a slow boil, stirring continually. Sir in chia seeds once you begin to see larger bubbles break the surface.
- The chia seeds will help the jam achieve a thicker texture while also adding fibre, protein and healthy Omega-3 fats. Add lemon zest if desired.
- Continue stirring the mixture over low heat for about 15 minutes, and then remove the pan from the stove.
- Use a blender or immersion blender for smoother texture. Allow to cool and add to mason jars.
- Enjoy on toast, crackers, over yogurt, ice cream or with a charcuterie board!
This jam keeps for a couple weeks in the fridge, but must be kept refrigerated.
