Ingredients:
- 3 Tortillas
- 1 cup black beans
- 1 cup corn
- 1 Avocado
- 1 cup mixed cheese
- Enchilada sauce
- Greek yogurt
- Cilantro
- Green onion
- Lime
- Cumin, paprika, chili powder, garlic powder, salt
Directions:
- Preheat oven to 400 degrees. Add the beans, corn, 1/2 cup cheese, 1 tbsp green onion, dry seasonings, and 1/2 cup enchilada sauce into a container and mix together.
- Grab your U-Konserve rectangle, and pour most of the remaining enchilada sauce into the bottom.
- Fill your tortillas with the black bean mixture, roll, and place into the U-Konserve container.
- Cover the enchiladas with the remaining enchilada sauce, and top with the remaining cheese.
- Bake for 10-20 minutes, or until the sauce is bubbling.
- Top with sliced avocado, greek yogurt, cilantro, and green onion. Squeeze some lime juice for an extra citrus kick.
- Serve while hot, or put the lid on your U-Konserve for storage.
Hi Tiffani! Thanks for commenting. U-Konserve containers be used at temperatures higher than 300 F or under the broiler (without the silicone cover), but above 450 degrees F, the steel may discolor. Discoloration does not affect performance. Containers should never be used above 600 degrees F.
All of my uKonserve containers say that they are oven safe to 300*? Can they really be used to 400* like this recipe says?
