
Easy Microwave Fried Rice in the BounceBox
Looking for a quick lunch, easy dinner, or simple dorm-room meal? This Microwave Fried Rice comes together right in the 48 oz Rectangle BounceBox® with just a few ingredients and a microwave. We used instant rice to keep things extra easy, and the result is a satisfying meal with minimal cleanup.
Ingredients
- 1 package instant rice (prepare according to package directions)
- 2 scrambled eggs
- 1 cup frozen mixed vegetables (we chose carrots + peas)
- 1 tbsp soy sauce (or to taste)
- 1 tsp sesame oil (optional)
- Green onions, sliced (optional)
Instructions
1. Cook the rice.
Prepare your instant rice directly in the 48 oz Rectangle BounceBox®, following the microwave instructions on the rice package.
2. Make the eggs.
Cook scrambled eggs in a separate BounceBox® following our recipe for Quick Microwave Scrambled Eggs.
3. Heat the vegetables.
Add the frozen mixed vegetables to the cooked rice and microwave for 1-2 minutes, or until heated through.
4. Combine everything.
Stir the scrambled eggs into the rice and vegetables. Add the soy sauce and sesame oil, then mix well.
5. Serve and enjoy.
Top with sliced green onions if desired and enjoy straight from the BounceBox®.

- Use leftover, day old cooked rice if you have some on hand.
